Sides
2 pounds baby potatoes, Yukon or white
2 quarts water
½ cup Kosher salt
4 teaspoons cold water
1 stick unsalted butter, chilled and cut into 1” chunks OR olive oil
1 tablespoon Dinosaur Cajun Foreplay or any Cajun seasoning
1 teaspoon Kosher salt
½ teaspoon black pepper
1 teaspoon Tabasco sauce
1 tablespoon fresh parsley, chopped fine
Wash potatoes under running water to remove excess dirt from skin. Fill large sauce pot with water and dump in salt. Bring water to a boil over high heat, add potatoes and cook 20-25 minutes or until fork tender. Drain and let steam 3-5 minutes.
NOTE
This recipe calls for quite a lot of butter. Originally this was truly ludicrous; 1lb for 2lb of potatoes. We made this with a quarter that amount (one stick) and it was more than enough. We believe you can probably create something just as delicious with the spices in oil, but haven't tried it yet. Directions below are the originals, for butter.
Heat water in a small sauce pot over medium heat. Add in butter gradually while stirring with a whisk constantly, melting slowly to stay emulsified. Once all the butter has been melted in, remove from heat and add in remaining ingredients. Serve over Salt Potatoes. If you need to hold the butter, keep it warm, not hot, to avoid separating.
